How Long Do Fresh Herbs Last (And How to Extend It)

Fresh herbs can transform a dish, but they're notoriously short-lived. Here's how to store them properly so they last as long as possible.

Soft Herbs (Tarragon, Parsley, Coriander)

Treat soft herbs like flowers. Trim the stems and place them in a glass of water, then cover loosely with a plastic bag and refrigerate. Change the water every couple of days. They can last up to 2 weeks this way.

Hard Herbs (Rosemary, Thyme)

Wrap hard herbs in a slightly damp paper towel, place in a zip-lock bag, and store in the fridge. They'll keep for 2-3 weeks.

Freezing Herbs

Chop herbs finely and freeze in ice cube trays with a little water or olive oil. Once frozen, transfer to a bag. Use directly from frozen in cooked dishes.

How Long Do Herbs Last?

  • Tarragon: 1-2 weeks refrigerated
  • Parsley: 1-2 weeks refrigerated
  • Rosemary: 2-3 weeks refrigerated
  • Basil: Best kept at room temperature, not in the fridge
